& PASTA PESTO
The perfect salad for spring and summer, bursting with color and packed with vitamins. It’s not only incredibly delicious, but it’s also light and refreshing! You can make it according to our recommendation or add your favorite veggies, but please, don’t forget a juicy peach, the creamy, dreamy Burrata cheese balls, and a rich balsamic cream to give it that perfect finishing touch.

5 balls of Burrata (approximately 1/2 ball per person)
10 cups of mixed greens (you can use arugula, spinach, or a mix)
2 cups of cherry tomatoes (cut in half)
4 ripe peaches (cut into medium slices)
1/2 cup of toasted walnuts (optional, for a crunchy touch)
5 ripe figs (cut into quarters)
Fresh basil leaves (a handful)
Extra virgin olive oil (to taste)
Balsamic cream or vinegar (to finish)
Salt and pepper (to taste)
Organic honey (to taste)
4 large ripe peaches, cut into medium slices
1 tablespoon of organic honey (optional, for a touch of sweetness)
Olive oil (a drizzle)
ROAST THE PEACHES
Preheat the oven to 180°C
Place the peach slices on a baking sheet and drizzle with olive oil and a thread of organic honey.
Roast the peaches for about 10-15 minutes or until they are lightly caramelized, golden, and tender. (You can also do this step in a pan if you prefer.)
PREPARE THE SALAD
In a large salad bowl or large flat plates, place the mixed greens, halved cherry tomatoes, quartered figs, and toasted walnuts (if using).
Add the roasted peach slices to the salad.
ASSEMBLE THE BURRATA
Place the Burrata balls on top of the salad, well-distributed.
You can break them up a bit or carefully cut them in half so the creamy cheese mixes with the ingredients.
DRESSING
Drizzle with olive oil and balsamic glaze-cream to taste.
Sprinkle with salt and pepper.
